Try this delicious and savoury summer salad, as a side or with grilled chicken, it will be a family favorite!

Olivado Summer Salad

Ingredients for Salad:

1 Avocado

2 Hardboiled eggs

1 Cucumber

1 Large garden carrot

2 cups of broccoli florets

¼ cup of currents

Mixed greens

Ingredients for Croutons:

3 Slices of white bread

2 Tablespoons of Olivado Macadamia Nut Oil

½ Teaspoon minced garlic

1 Teaspoon of basil

¼ Teaspoon of ground oregano

Pepper to taste

Ingredients for salad dressing:

2 Tablespoons of Olivado Avocado Oil

1 Tablespoon of water

¼ Teaspoon of minced garlic

½ Teaspoon of mustard powder

1 Tablespoon of lemon juice

1 Teaspoon of anchovy paste

¼ Teaspoon of worcestershire sauce

In a large bowl slice and dice the salad ingredients and toss in to a bowl of mixed greens. Cut bread slices in to squares then in a frying pan mix oil, garlic, spices and bread squares. Cook and toss at medium heat until croutons are lightly fried, add a little pepper to taste and remove from heat. In a small bowl mix salad dressing ingredients and then dress Salad and toss. Add croutons and Parmesan cheese if desired.

No cooking required? Sign us up! Avocado Salmon Lettuce Wraps are super easy, healthy, and, most importantly, delicious!

Ingredients:

2 large avocados

2 tbsp. fresh lime juice

1/2 to 1 can salmon, flaked

1/4 cup each – diced English or Persian cucumber, shredded carrot, thinly sliced red bell pepper

1 tsp five spice seasoning

Sea salt and fresh ground black pepper to taste

1 head butter lettuce, cored, wash and dry leaves

Instructions:

Cut avocado into small to medium chunks, add lime juice and toss to coat. Add remaining ingredients and using a rubber spatula, gently toss to combine. Taste and adjust seasoning.

Arrange leaves on a large platter, spoon the avocado-salmon mixture onto the center of each leaf and serve with accompanying sesame ginger miso dressing (see recipe below).

Sesame Ginger Miso Dressing

Ingredients:

1/3 cup rice vinegar

1/4 cup avocado oil or grape seed oil*

2 tbsp sesame oil

1 tbsp light brown sugar or agave syrup

1 tbsp miso paste

1 tbsp light soy sauce

1 tbsp sesame seeds

1/2 tsp fresh grated ginger

1 large garlic clove

Instructions:

Place all the ingredients in a blender and pulse until all the ingredients are completely combined and emulsified. Use immediately; store any unused portion in the refrigerator.

Cooking Tip:

*If you do not have avocado oil or grape seed oil, use olive oil.

Delicious and full of nutrition, Yam Fries are a yummy alternative to French Fries. Try this simple recipe, using Olivado Avocado Oil, as a side to BBQ Ribs or Steak this summer!

Ingredients:

2 tbsp Olivado Avocado oil

6 large yams scrubbed and cut into strips

1 tbsp paprika

1 tsp cumin

Coarse salt

Instructions:

Step 1: Preheat oven to 450°F. In a plastic bag, drizzle oil over yams and toss to coat evenly. Add spices and toss to combine.

Step 2: On a greased baking sheet, place fries in a single layer leaving space between them so they get cripsy on all sides

Step 3: Bake for 10 minutes, then flip fries over with a spatula. Bake for another 10. They should be tender on the inside and golden and crisp on the outside. Sprinkle with salt to taste and serve warm.
