The Avocado Zest is delicious. It has a fresh, lemon taste.  I drizzle it on my salads. I recommend it to anyone who wants a high quality oil with a hint of citrus for salads and fish.

Pear and Pecan salad with Goat Cheese Coulis and Red Wine Vinaigrette

Ingredients

At a glance
Salad

Dressing
3 Tbsp Omega Plus Oil
1 1/2 Tbsp red wine vinegar
1 tsp sugar
1 tsp prepared mustard
1 clove of garlic crushed
1/4 tsp salt pepper to taste

Goat Cheese Coulis
2 0z goat cheese
2+ Tbsp half and half

Salad
1 large head romaine lettuce, washed and cut or torn into small pieces
1 pear peeled, cored and sliced
1/2 avocado sliced
1/4 cups pecans
1/8 cup sugar dried cranberries (optional)

Methods/steps

Mix dressing ingredients together and allow to sit for at least an hour. Remove garlic clove just prior to serving.

Goat Cheese Coulis: Blend cheese and half and half together until is is smooth and pourable, add more milk if necessary.

Add pecans and sugar into a pan, and cook over medium low heat until the sugar caramelizes. Remove from heat.

Assemble salad, top with pecans and dried cranberries then drizzle with goat cheese coulis and dressing.
