Mushroom Stuffed Turkey Breast Roast
Ingredients
1 lb mushrooms, chopped
2 tbsp Olivado Organic Avocado Oil
3 leeks, washed and finely chopped (white and light green parts only)
1 garlic clove, minced
1/2 cup chicken stock
2 tbsp fresh parsley, chopped
2 tbsp fresh thyme, stems removed
2 tbsp fresh sage, chopped
1 tbsp lemon zest
2 turkey breasts, 2 lbs. each
Directions
Heat 1 tbsp of Olivado Organic Avocado Oil in large skillet over medium heat. Sautée mushrooms and leeks until softened and light brown. Add garlic, herbs, chicken broth and cook until all the liquid has been absorbed. Remove from heat and season with salt and pepper, let cool.
Place one turkey breast on a flat surface and run cooking twine underneath at one inch intervals. Place the mushroom mixture over one turkey breast and top with the other, tie with twine. Season with salt and pepper. Heat remaining oil in a dutch oven or roasting pan and sear turkey on all sides over a medium high heat. Place into oven and roast, turning twice, until the internal temperature reaches 165°F. (Approximately 1 hour and 45 minutes.)
Remove from oven and cover with foil for at least 15 minutes before carving.
Scalloped Potatoes With Herbs
Ingredients
8-10 medium red potatoes scrubbed and thinly sliced
1/3 cup cream
1/4 cup Olivado Macademia Nut Oil
1/2 cup chopped fresh herbs (e.g. parsley, thyme, basil, rosemary, oregano, salt and pepper)
Directions
Preheat oven to 350°F. Toss sliced potatoes with cream, oil and herbs and allow to soak for minimum one hour. Once the potatoes have absorbed most of the liquid, arrange in a greased casserole dish. If there is any liquid remaining, pour it down the side of the casserole dish so that it goes to the bottom of the potatoes. Sprinkle with salt and pepper.
Cook for 45 mins to an hour or until the potatoes are nicely browned on top.
